Breakfast for dinner nights are my favorite! The last of the apples we picked on vacation in Illinois got baked. George, usually a picky eater, ate two bowls of the oatmeal bake (recipe below).
The trees were small enough George could pick the apples too. My apple picking ninja! Just thinking about it makes me crave a cup of cider. We later attended my cousin's beautiful fall wedding at a brewery. A photographer could not have asked for a more picturesque day.
Apple Oatmeal Bake
2 Honey Crisp Apples chopped
2Tablespoons Maple Syrup
Large handful Pomegranate seeds
Preheat oven to 350. Lightly oil a baking dish. Boil water and add to oatmeal in the baking dish. Let the oatmeal stand for ten minutes.
While the oatmeal is standing, microwave the chopped apples for two minutes.
Add the apples and the rest of the ingredients to the oatmeal. Sprinkle pomegranate seeds on top.
